Passion fruit and lemon cheese tart

I love desserts with a tangy sour punch. Having passion fruits and lemon together into a dessert has got to be one of the best combinations. To make this dessert, all you need is a food processor. Simply put, place all the ingredients into the food processor and then fold through the passion fruit pulp and lemon juice and pour the mixture into the baking tray and off it goes into the oven. It is almost impossible to go wrong with it. For best results, make it a day ahead so that the dessert has time to set and rest in the refrigerator. Bon appetite! Key lime pie

I made pavlova for a party on ANZAC Day and had six egg yolks left over from it. Since my uncle passed me a bunch of limes from his garden, I thought why not make a key lime pie. Key lime pies are super easy to make and almost fool proof. All you need is digestive biscuits or graham crackers, butter, honey, lime, condensed milk and egg yolks. I’ve always loved the sweet and sour combination of this dessert. The sour punch from the lime makes it refreshing and combined with freshly made whipped cream – pure divine. I was very impressed when the pie was done that I went to buy flowers specially for the photo shoot. Thank goodness my housemate wasn’t at home when I was taking the photos because I looked absolutely insane lying on the ground, climbing onto the chair, squatting just for the perfect shot. Apple crumble

Apples are one of my least favourite fruits. For some strange reason, I hate the texture of it and I get goosebumps when I hear the crunching of the apple – weird, I know. However, since apples are in season now, I decided to give a go at an apple dessert. I had a hard time deciding between an apple pie or an apple crumble but I didn’t have the time to make the pie crust beforehand so I decided to make an apple crumble instead. For the apples, I used a mixture of Pink Lady and Fuji apples for a varied taste. Remember to peel and core the apples! Salted caramel chocolate slice

Tray bakes are one of my favourite desserts to make. These bite sized slices are perfect for any occasion. I made this salted caramel chocolate slice specially for ANZAC day. It’s my own twist to spice up the traditional ANZAC day cookie. For the base, I used my ANZAC day cookie recipe and spread it across a square pan.
