Christmas snowman decoration

One last bake before Christmas! I’ve decided to make a snowman decoration for my cupcakes and brownies. You can choose to use either whipping cream or cream cheese for the snowman body. However due to the hot and humid weather in Singapore, it is easier to work with cream cheese instead of whipping cream. This snowman decoration is super easy to make and I had a lot of fun building my snowman. It looks so cute that I cannot bear to eat it. Plus it makes a delightful party dessert that is bound to impress. Ingredients Marshmallows 1 small piece of dark chocolate Pretzel sticks or pretzels broken up Raspberry 250g cream cheese 30g unsalted butter 1 tsp vanilla essence 40g icing sugar Directions Melt the small piece of chocolate in the microwave oven Using a skewer, dab a tiny bit of the melted chocolate onto one side of the marshmallow to create the eyes and mouth Leave it to cool Using a mixer, whisk the cream cheese, unsalted butter, vanilla essence and icing sugar …

Chocolate fudge santa hat brownies

The Christmas baking continues. I’ve been having a lot of fun trying out new recipes and decorating my desserts for this festive season. Today’s dessert decoration would be the classic santa hat. It is super easy to make and takes less than 10 min to decorate. I combined two recipes to make the ultimate chocolatey  dessert. First I made a chocolate brownie cake in a square cake tin. After the cake has cooled down, I made a chocolate fudge using condensed milk to spread over the cake. For the santa hat cream, I wanted to use whipping cream however the weather in Singapore is too hot and humid that it’s hard to make the cream without it melting. So I decided to use cream cheese frosting instead. The chocolate fudge santa hat brownies were a hit amongst my friends last night. This pretty tray bake makes the perfect party dessert because it is simply irresistible. Nutrition per slice (serves 16) Ingredients For the brownie cake 100g unsalted butter 100g caster sugar 50g brown sugar 125g …

Orange cinnamon cookies

One thing I love about baking at home is that my mom has lots of beautiful plates that I can use for my food photography. She has all sorts of different size plates and tea cups that she accumulated over the years from around that world that make the perfect prop for food styling. I’m still on a christmas baking quest and today’s menu is orange cinnamon cookies. I did not have any snowflake shaped cookie cutter so I used a star cookie cutter instead and decorated it using melted white chocolate. You can use icing gel if you prefer. One thing about making cookie dough – they are best made a day ahead and then stored in the refrigerator for the flavour to settle in. It can be quite tricky working with melted white chocolate because they tend to harden quickly which could clog up your pipping nozzle. What I normally do is to place the nozzle in boiling hot water so that it would remain hot/warm while I’m pipping the white chocolate. Alternatively …

Reindeer cupcakes

With less than two weeks to Christmas, I’m getting into the holiday season and trying out some new baking decorations for this festive occasion. I remember coming across these reindeer cupcakes on instagram and I’ve always wanted to try it. So I went down to the shops, bought some pretzels for the antlers, m&m chocolate chips for the nose and white chocolate chips for the eyes. I was hoping to find some small plain biscuits or ritz minis for the muzzles, unfortunately, I couldn’t find any so I made my own plain vanilla cookies. Putting the ingredients together to make the reindeer is super fun and I felt like a kid again. For the cupcake, I made a moist chocolate cupcake with Nutella filling and a chocolate ganache to coat over the cupcakes. Not the healthiest dessert but definitely the cutest and it tastes superb! Nutrition per cupcake (without decorations) Ingredients To make the cupcakes (one batch makes 12) 100g plain flour 40g cocoa powder 3/4 tsp baking powder 1/2 tsp baking soda 1/4 tsp …
