It’s the time of the year for reindeer cupcakes and gingerbread man. This year, I’m bringing sexy back. I had a lot of fun designing these gingerbread men and women. Initially, I started off with the traditional designs but slowly it got evolved into a swimsuit collection. Definitely a great way to engage kids into designing their very own gingerbread man. Ingredients 140g unsalted butter (room temperature) 100g brown sugar 2 egg yolks 1 tsp vanilla essence 140g gluten free flour 60g brown rice flour 40g corn flour 1 tsp baking powder 1 tsp cinnamon powder 1 tsp nutmeg powder 1 tsp ginger powder 1/2 teaspoon cardamon powder Directions Preparation time: 10min for the cookie dough and 30min for the pippingBaking time: 15-20min or when the cookie turns golden brown Preheat the oven to 180 degrees Cream the butter and sugar until light and fluffy Add in the two egg yolks and 1 tsp of vanilla essence and continue to cream Sieve the flour and baking powder and spices into the creamed mixture.
