Lemon zest almond pretzels

The insane baking continues. The amount of cookies that I’ve been churning out everyday is scary. Think my family and friends are going to get very tired of being my guinea pigs soon. So my new recipe for the day – Almond lemon zest pretzels. If you want to test someone’s taste palate, let them try this cookie. So far the response I’ve got was Hmm.. this tastes familiar. Is it orange? Fruitcake flavour! (weirdest comment ever) Lime! The flavours were not that far off except for fruitcake – think my sister’s taste palate is damaged. This cookie is one of my favourite – it is crumbly and irresistible. However, to get the pretzel shape, you need to get a pretzel cookie cutter. It makes your life so much easier. I always like to make my cookie dough a day ahead – this enhances the flavour of the cookies. Almond white chocolate matcha cookies

I was reading this book called the Living Gita which is a commentary about the Bhagavad Gita and I came across this passage “If a seeker constantly thinks of food, all the merit attainted by his or her practice will melt away like  a bundle of salt thrown in the river… Too much time spent thinking of food, making food, eating food”. After I read that, I was like “shit!” I am so guilty of this! Anyway back to making of foods – Almond matcha cookies with white chocolate chips. My family’s new favourite cookie. Enjoy! Nutrition per cookie (one batch makes 40) Ingredients 140g plain flour 100g wholemeal plain flour (optional – you can use plain flour instead) 2 large egg yolks 20g matcha powder 1 tsp vanilla essence 1 tsp baking powder 150g unsalted butter 120g caster sugar 60g white chocolate chips 50g almond flakes P.s The cookies turn brown very quickly so do watch over it carefully. Almond cornflake cookies

Chinese New Year is fast approaching so I’m busy testing out new cookie recipes. I was trying to replicate the cornflake cookies from Bengawan Solo but it wasn’t successful at all. Instead, I came up with my own almond cornflake cookies which is now my new favourite thing to bake! Nutrition per cookie (one batch makes 75 cookies) Ingredients 100g plain flour 100g wholemeal flour 120g unsalted butter 80g brown sugar 1 large egg 60ml maple syrup 120g cornflakes 80g almond flakes 1 tsp vanilla essence 1 tsp bicarbonate soda Directions Preparation time: 15 min Baking time: 15min or when the cookie turns brown Cream the butter and sugar until light and fluffy Sieve in the flour and bicarbonate soda and mix it until it form a cookie dough In a saucepan, slowly heat the maple syrup with almond flakes. Ensure that all the almond flakes are coated with syrup Pour the syrup mixture over the cornflakes and mix it together Add the cornflake mix together with the cookie dough Place the dough into the fridge. Coffee linseed cookies

I’ve been wanting to make these cookies for a long time. Strangely, I can’t seem to find any coffee essence in Australia so I had to wait till I get back to Singapore to make it. I added linseeds into the cookies for a nutty flavour. The best part about making your own cookies is that you can be extremely generous with the amount of chocolate you add. I love using huge chunks of cadbury dark chocolate in my cookies. Every single bite has a chocolate bit in it that makes it irresistible!
