I made Tiramisu a few days ago and had leftover coffee and Kahlua. Instead of throwing the good stuff away, I decided to make coffee kahlua cupcakes out of it. The recipe for my cupcakes are pretty similar to my coffee cake recipe just that I included kahlua into it – yum! You can also use Tia Maria or any coffee liquor for this recipe.
I’m not a fan of working with frostings because I find it very messy and I do struggle with the piping bag. But I decided to be fancy today. Cupcakes do look nicer and taste better with the right kind of frosting. Since I had cream cheese in my fridge, I made a chocolate cream cheese frosting with a hint of kahlua again. The cupcakes with frosting were so delicious that I ate two at one go – so much for trying to cut down on sugar. This is what happens when you love what you bake!

Ingredients for the cupcake
- 120g unsalted butter (room temperature)
- 100g caster sugar
- 2 large eggs
- 50ml coffee (I used 1 tbs instant coffee granules mixed in 50ml water)
- 50ml kahlua or any coffee liquor
- 1 tsp coffee essence
- 120ml buttermilk
- 220g self raising flour
- 50g walnuts
- 50g dark chocolate chips
Ingredients for the frosting
- 250g cream cheese (room temperature)
- 30g unsalted butter (room temperature)
- 100g 70% dark chocolate (melted)
- 40g icing sugar
- 2 tbs kahlua or any coffee liquor
Directions
Preparation time: 10-15min
Baking time: 15-20min or when the skewer comes out clean
- Preheat the oven to 180 degrees
- Prepare a 12 case muffin tin
- Using a whisk, cream the butter and sugar until light and fluffy
- Then add in the eggs one at the time and continue to cream
- Turn the whisk down to low speed and add in the coffee, kahlua and coffee essence
- Slowly sieve the self-raising flour in and continue to whisk until a uniform mixture is formed
- Fold in the chocolate chips and walnuts
- Divide the batter equally into the muffin tin
- Place it into the oven to bake for 15-20min or when the skewer comes out clean
- Leave the cupcakes to cool
To make the frosting
- Whisk the butter and cream cheese at high speed until light and fluffy
- Add in the icing sugar and 2 tbs of kahlua and continue to whisk
- Fold the melted chocolate into the mixture and then whisk it lightly until a uniform consistency is formed
- Prepare a piping bag and place the frosting into the piping bag
- Carefully pipe the frosting over the cooled down cupcakes
