Tiramisu

I got this recipe off from my friend who made one of the best tiramisu I’ve ever had. It was my first time making Tiramisu and it was surprisingly easy and almost fool-proof. The tiramisu tasted so good that I made two batches (one in a tray and the other in wine glasses) because I knew that it would be a hit at the dinner party and I was absolutely right!

Nutrition per serving of tiramisu (one batch serves 12):

Tiramisu

Ingredients:

  1. 500g mascarpone cheese
  2. 110g caster sugar
  3. 4 eggs
  4. 8 table spoons of instant coffee dissolved in 300ml of warm water
  5. 8 table spoons kahlua or any coffee liquor
  6. 12 sponge fingers
  7. 40g cocoa powder for sprinkling
  8. 50g 70% dark chocolate for shaving

Directions

Preparation time: 20 min
Resting time: At least 8 hours

  1. Dissolve 8 tbs of instant coffee with 200ml warm water. Add 8 tbs of Kahlua into the mixture and mix well
  2. Dip the sponge fingers into the coffee mixture. Just a quick dip – you don’t want the sponge fingers to become too soggy
  3. Line the soaked sponge fingers in the glasses/tray
  4. Whisk the four egg yolks together with 55g caster sugar until the mixture becomes pale and thick
  5. Fold the mixture into 500g of mascarpone cheese
  6. Fold it well until a smooth consistency
  7. Whisk the egg whites with the remaining sugar until soft white peaks form
  8. Once the soft white peaks are formed, fold it into the mascarpone mixture
  9. Fold it until a smooth consistency is reached
  10. Spoon the mixture into the glasses/tray
  11. Sprinkle cocoa powder and shave some chocolate over the tiramisu
  12. Leave it in the refrigerator to chill for at least 8 hours before consuming
