Cornflake cookies

It has been a while since I’ve posted any recipes. For the past few weeks I’ve been working on a new website to sell my cakes and cookies online so it’s going to be an exciting new start for me! Also, I’ve been trying to improve my photography skills and work on food styling – gosh it is quite a challenge and I look ridiculous standing on chairs, squatting, playing around with props just to get the perfect shot haha. After multiple attempts – finally a few good shots! So the recipe for the day is cornflake cookies! This is an adaptation from my previous post on almond cornflake cookie. I’m still obsessed in trying to recreate the cornflake cookies sold in Bengawan Solo but this is good enough to satisfy me! This cookie is really simple to make. Banana marble cake

I love it when bananas go on sale at Coles – it means that I get to make banana bread or cakes again. Coles shopping is like my favourite thing to do – I love to see what is on sale and I can’t help myself whenever baking tins or equipment goes on sale. It is like an addiction haha. So my new toy for the week is a Wiltshire bundt cake tin – it was half price! How can anyone say no to that? Look at that perfectly shaped bundt cake! Oh that baking tin is now my favourite thing to use for cakes! So back to baking… today’s recipe is banana marble cake. Marble cakes are really easy to make even though it looks complicated. But essentially it is separating the cake batter into two and adding cocoa powder into one of them. Simple as that! Coconut pretzel cookies

Yay! I’m finally done with my exams! To celebrate, I’ve turned to my favourite pastime – obviously baking. Since I didn’t have much time for grocery shopping during the week, I just went through my pantry and found some left over desiccated coconut… hence the cookie of the week shall be coconut pretzel cookies! It’s really easy to make doesn’t take much time too. Hope that you’ll enjoy it! Triple chocolate cookies

The thing about making cookies is that once you have a good cookie dough recipe, you can basically add any ingredient you like into your cookie. Since I’m a huge chocolate fan and I can’t make up my mind what chocolate to add in, why not include all three types of chocolate into one cookie? No one can resist that. Nutrition per cookie (one batch makes 24) Ingredients for the cookies 200g plain four 40g almond meal 140g unsalted butter (softened to room temperature) 100g caster sugar 2 egg yolks 1 tsp baking powder 1 tsp vanilla essence 50g milk chocolate chips 50g dark chocolate chips 50g white chocolate chips Directions Preparation time: 20 min Baking time: 10-15 min Cream the butter and sugar until light and fluffy Add in the two egg yolks and 1 tsp of vanilla essence and continue to cream Sieve the flour, almond meal and baking powder into the creamed mixture.
