Peanut butter cookies

Before I started making peanut butter cookies, I checked out a few recipes online. Most of the recipes just stated creaming peanut butter and sugar together – does not require the addition of butter. I tried out those recipes and my cookies failed terribly. Peanut butter alone just doesn’t give the right kind of texture that I like in my cookies. Or maybe it’s because I’m fussy about how cookies should turn out. Anyway, after five failed attempts, I’m finally satisfied with the results so here you go – my peanut butter cookies recipe!

Nutrition per cookie (one batch makes 75)

Ingredients for the cookies

  1. 100g unsalted butter
  2. 150g peanut butter – I used kraft peanut butter
  3. 60g brown sugar
  4. 60g caster sugar
  5. 220g plain flour
  6. 1 egg
  7. 1 tsp vanilla essence
  8. 0.5 tsp bi-carbonate soda
  9. 0.5 tsp baking powder
  10. 0.25 tsp salt
  11. 100g chocolate chips (optional)

Preparation time: 15 min
Baking time: 10-15 min or when the cookies turn brown

  1. Cream the butter, peanut butter and sugar together until light and fluffy
  2. Add an egg and 1 tsp of vanilla essence and continue to cream
  3. Prepare the plain flour, bicarbonate soda, baking powder and salt in a mixing bowl
  4. Sieve the dry ingredients into the batter
  5. Mix well until a uniform dough is formed
  6. Cling wrap the dough and leave it in the freezer for two hours or overnight
  7. Preheat the oven to 180 degrees
  8. Roll the dough out into little balls and use a fork to press it down
  9. Bake it in the oven until the cookies turn brown
