Peanut butter cupcakes

Peanut butter and chocolates are my nemesis. I love peanut butter so much that I eat it by the tablespoon straight from the jar – so much for being a dietitian. This is why I banned myself from buying peanut butter unless absolutely necessary. Two weeks ago my friend gave me a jar of peanut butter and to save myself from “inhaling” it, I’ve decided to make peanut butter cupcakes with chocolate ganache. Because peanut butter are quite dry and very dense, the tricky part is for the cupcakes to remain moist. So I’ve turned to one of my favourite ingredients – buttermilk. You can get buttermilk from the store or you can make your own. I don’t see much difference honestly so I usually make up my own buttermilk using full cream milk and white vinegar. Chocolate banana muffins

I bought some bananas last weekend and was waiting for it to overripe to make some banana muffins. Now that Lent is over, I can finally stuff my face with chocolate. So I decided to make chocolate banana muffins today. As much as I love my Kitchen Aid, but I  find it really heavy and troublesome to use. Thank goodness, most banana muffin recipes uses the mixing method which makes my life so much easier. Baking has always been a therapy for me. I like how it is systematic and that I get to add my favourite ingredients into my own baking. Also, I enjoy watching television while baking. Christmas snowman decoration

One last bake before Christmas! I’ve decided to make a snowman decoration for my cupcakes and brownies. You can choose to use either whipping cream or cream cheese for the snowman body. However due to the hot and humid weather in Singapore, it is easier to work with cream cheese instead of whipping cream. This snowman decoration is super easy to make and I had a lot of fun building my snowman. It looks so cute that I cannot bear to eat it. Plus it makes a delightful party dessert that is bound to impress. Reindeer cupcakes

With less than two weeks to Christmas, I’m getting into the holiday season and trying out some new baking decorations for this festive occasion. I remember coming across these reindeer cupcakes on instagram and I’ve always wanted to try it. So I went down to the shops, bought some pretzels for the antlers, m&m chocolate chips for the nose and white chocolate chips for the eyes. I was hoping to find some small plain biscuits or ritz minis for the muzzles, unfortunately, I couldn’t find any so I made my own plain vanilla cookies. Putting the ingredients together to make the reindeer is super fun and I felt like a kid again. For the cupcake, I made a moist chocolate cupcake with Nutella filling and a chocolate ganache to coat over the cupcakes. Not the healthiest dessert but definitely the cutest and it tastes superb!
