Almond white chocolate matcha cookies
I was reading this book called the Living Gita which is a commentary about the Bhagavad Gita and I came across this passage “If a seeker constantly thinks of food, all the merit attainted by his or her practice will melt away like a bundle of salt thrown in the river… Too much time spent thinking of food, making food, eating food”. After I read that, I was like “shit!” I am so guilty of this! Anyway back to making of foods – Almond matcha cookies with white chocolate chips. My family’s new favourite cookie. Enjoy! Nutrition per cookie (one batch makes 40) Ingredients 140g plain flour 100g wholemeal plain flour (optional – you can use plain flour instead) 2 large egg yolks 20g matcha powder 1 tsp vanilla essence 1 tsp baking powder 150g unsalted butter 120g caster sugar 60g white chocolate chips 50g almond flakes P.s The cookies turn brown very quickly so do watch over it carefully. If you prefer soft cookies, reduce the oven temperature to 160 degrees and omit the baking …
