Have you ever thought of visiting Tasmania? This beautiful island situated off the south of Australia is a reminiscence of New Zealand. It’s harsh climate and landscape create one of the most beautiful scenery in the world. I visited Tasmania twice – Once in November 2014 and again in April 2016. There is just so much to see and do in Tasmania that I am thinking of going again. Depending on what you like to do, a good amount of time to spend in Tasmania will be at least 5 nights. I’ve complied my itineraries for both trips and hope that it will spur your interest to make it your next holiday destination. Almond cookies

Coming back to Australia really makes me miss home. So lately, I’ve been on a quest to recreate the goodies that we have during Chinese New Year. My uncle passed me his homemade almond cookies recipe and it was absolutely delicious – All my Singaporean friends loved it. The thing about almond cookies is that it has to be crumbly in the inside. It’s not a soft cookie – in fact it is a hard crumbly cookie. The best part about this cookie is that it does not require any equipment. All you need is a sieve and mixing bowl so less washing to do. But it does require some strength in sieving the icing sugar. This cookie unlike other kinds of cookies does not require resting in the refrigerator. Once the dough is made, roll out the cookies straight away and pop it into the oven. Peanut butter cookies

Before I started making peanut butter cookies, I checked out a few recipes online. Most of the recipes just stated creaming peanut butter and sugar together – does not require the addition of butter. I tried out those recipes and my cookies failed terribly. Peanut butter alone just doesn’t give the right kind of texture that I like in my cookies. Or maybe it’s because I’m fussy about how cookies should turn out. Anyway, after five failed attempts, I’m finally satisfied with the results so here you go – my peanut butter cookies recipe! Lemon zest almond pretzels

The insane baking continues. The amount of cookies that I’ve been churning out everyday is scary. Think my family and friends are going to get very tired of being my guinea pigs soon. So my new recipe for the day – Almond lemon zest pretzels. If you want to test someone’s taste palate, let them try this cookie. So far the response I’ve got was Hmm.. this tastes familiar. Is it orange? Fruitcake flavour! (weirdest comment ever) Lime! The flavours were not that far off except for fruitcake – think my sister’s taste palate is damaged. This cookie is one of my favourite – it is crumbly and irresistible. However, to get the pretzel shape, you need to get a pretzel cookie cutter. It makes your life so much easier. I always like to make my cookie dough a day ahead – this enhances the flavour of the cookies. It can be a little tricky making this cookie during a hot weather with the pretzel cutter because it gets sticky. I was so annoyed making …
