Peanut butter cookies

Before I started making peanut butter cookies, I checked out a few recipes online. Most of the recipes just stated creaming peanut butter and sugar together – does not require the addition of butter. I tried out those recipes and my cookies failed terribly. Peanut butter alone just doesn’t give the right kind of texture that I like in my cookies. This cookie is one of my favourite – it is crumbly and irresistible. However, to get the pretzel shape, you need to get a pretzel cookie cutter. It makes your life so much easier. I always like to make my cookie dough a day ahead – this enhances the flavour of the cookies. It can be a little tricky making this cookie during a hot weather with the pretzel cutter because it gets sticky. I was so annoyed making …

After I read that, I was like “shit!” I am so guilty of this! Anyway back to making of foods – Almond matcha cookies with white chocolate chips. My family’s new favourite cookie. Enjoy! Nutrition per cookie (one batch makes 40) Ingredients 140g plain flour 100g wholemeal plain flour (optional – you can use plain flour instead) 2 large egg yolks 20g matcha powder 1 tsp vanilla essence 1 tsp baking powder 150g unsalted butter 120g caster sugar 60g white chocolate chips 50g almond flakes P.s The cookies turn brown very quickly so do watch over it carefully. If you prefer soft cookies, reduce the oven temperature to 160 degrees and omit the baking …
