Mayver’s coconut cookies

Lately I’ve been inspired by wholesome, natural baked goods that I’ve decided to give it a try. So I went down to Woolies and Coles and bought buckwheat flour, almond meal, spelt flour, coconut sugar… and gosh! These stuff are expensive! I decided to combine all these natural goodness with my new found craze – Mayver’s all natural almond coconut & cacao spread. The cookies turned out delicious and I couldn’t stop popping them into my mouth. On a side note, unless you have a gluten or fructose intolerance, it might not be necessary to spend that amount of money on these natural products because the cookies tastes just as good with normal plain flour and brown sugar.


Nutrition per cookie (10g)



  1. 80g spelt flour
  2. 40g buckwheat flour
  3. 30g almond meal
  4. 60g desiccated coconut
  5. 90g rolled oats
  6. 60g coconut sugar
  7. 100g mayvers almond spread
  8. 2 tbs maple syrup
  9. 4 tbs soy milk lite
  10. 0.5 tsp bicarbonate soda mixed with 1.5 tbs of boiling water


Preparation time: 10min
Baking time: 10-12min or when the cookies turn brown

  1. Preheat the oven to 180 degrees
  2. Mix the flour, sugar, rolled oats and salt together in a large mixing bowl. Run your fingers through it to get rid of the lumps
  3. Add the Mayver’s almond coconut cocoa spread and maple syrup into the dry mixture
  4. Mix the ingredients evenly
  5. Add in the bicarbonate soda that has been mixed with boiling water and soy milk into the mixture and continue to mix till even
  6. Line the baking tray with baking paper. Roll the mixture out into tiny balls and place them onto the baking tray
  7. Bake it in the oven for 10-12min or until the cookies turn brown
