I saw this recipe on BBC good food and decided to make some healthy alterations to it. It is a classic recipe and a hit amongst friends. You can even use the same recipe and add coffee essence instead of vanilla to make coffee chocolate chip cookies.
Ingredients
- 120g butter
- 40g brown sugar
- 40g caster sugar
- 2 tsp of vanilla essence or coffee essence
- 1 large egg
- 100g plain flour
- 100g whole meal flour
- ½ tsp bicarbonate soda
- ¼ teaspoon salt
- 100g dark chocolate chip (I usually use Cadbury 70% cacao)
Preparation time: 30min
Oven temperature: 190C
Baking time: 10-15min (or once the cookies turn brown)

Beat the butter and sugar until light and creamy
Beat in the egg and vanilla essence. Don’t worry about the mixture cuddling at the beginning, it should reach a consistent texture after a few minutes of beating.
Sieve in the flour and bicarbonate soda
Mix it well.
Take the dough out from the refrigerator and chop up the chocolate chunks.
Roll the dough together with the chocolate chunks into tiny balls. I usually add two big chunks of chocolate into each cookie because I love bitting into huge chunks of chocolates!
Bake it in the oven for about 15 min or until the cookie turns brown.
There you have it! A simple way to treat yourself and loved ones.
