Preparation time: 30 – 40 minutes
Oven temperature: Preheat the oven to 180 degrees.
Baking time: 40 minutes (or when the top turns brown)
Ingredients for the cookie dough:
60g caster sugar
1 large egg
1 tsp of coffee essence
160g plain flour
0.5 tsp baking soda
0.5 tsp salt
150g of chocolate chip
Ingredients for the cheesecake
300g of lite cream cheese
300g of greek yoghurt
2 large egg
1 tsp vanilla
3 tbs caster sugar
To make the cookie dough
With an electric mixer, cream butter and sugars in a small mixing bowl until light and fluffy
Add the egg and coffee essence; cream again until smooth
Add the flour, baking soda, and salt. Stir gently until incorporated. Stir in chocolate chips
Store in refrigerator until ready to use.
To make the cheesecake:
Cream the cream cheese and sugar together until fluffy
Add the greek yoghurt and cream it until smooth
Add the egg and vanilla and mix again until well combined.
Press the cookie dough out onto the tray
Pour the cream cheese mixture on top. Spread cookie dough on top of the cream cheese layer.don’t worry about the gaps in between the cookie dough as it will expand when baking.
Bake for 40 minutes or until the top is set. Let it cool and place it in the fridge preferably overnight before consuming.
