Marble cakes are one of my favourite cakes growing up. As a kid, I was always amazed by the waved like patterns in the cake. Turns out it is really easy to make it – all you need is a spoon to swirl the mixture around and the best part is that now I get to decide the types of swirls I want in my cake!
Ingredients
- 120g unsalted butter (at room temperature)
- 225g self raising flour
- 100g caster sugar
- 4 large eggs (at room temperature)
- 1 tablespoon of cocoa powder
- 1 teaspoon of vanilla essence
- 4 tablespoon of non-fat yoghurt or greek yoghurt (tastes better with greek yoghurt)
- 50g of grated dark chocolate (optional)
Directions
Preparation time: 20 min
Baking time: 30-40 min
- Preheat the oven to 180 degrees
- Grease a loaf pan
- Beat the butter and sugar together until light and fluffy
- Add in the egg one at a time and continue to whisk
- Add in the yoghurt, one tablespoons at a time and 1 tsp of vanilla essence
- Sieve the flour into the mixture and fold it until a uniform texture is formed
- Split the batter into two
- Add in cocoa powder into one of the batter and mix it well
- Take 2 spoons and use them to dollop the chocolate and vanilla cake mixes into the tin alternately. Take a skewer and swirl it around the mixture in the tin a few times
- Place the loaf into the oven to bake for about 30-40min or when the skewer comes out clean
