Pistachio cranberry cookies

First post of the year! I’ve actually made these cookies last year during Christmas but I didn’t have the time to post it. It’s really easy to make cookies because all you need is a good simple cookie dough recipe and then you can add whatever ingredients you want into it. Since I was feeling rather fancy over christmas, I’ve decided to make some pistachio and cranberry cookies. Nutrition per cookie (one batch makes 60) Ingredients 140g unsalted butter (room temperature) 100g caster sugar 2 egg yolks 1 tsp vanilla essence 240g plain flour 1 tsp baking powder 50g pistachio nuts 50g cranberries Directions Preparation time: 10min Baking time: 15-20min or when the cookie turns golden brown Cream the butter and sugar until light and fluffy Add in the two egg yolks and 1 tsp of vanilla essence and continue to cream Sieve the flour and baking powder into the creamed mixture. Chocolate fudge santa hat brownies

The Christmas baking continues. I’ve been having a lot of fun trying out new recipes and decorating my desserts for this festive season. Today’s dessert decoration would be the classic santa hat. It is super easy to make and takes less than 10 min to decorate. I combined two recipes to make the ultimate chocolatey  dessert. First I made a chocolate brownie cake in a square cake tin. After the cake has cooled down, I made a chocolate fudge using condensed milk to spread over the cake. For the santa hat cream, I wanted to use whipping cream however the weather in Singapore is too hot and humid that it’s hard to make the cream without it melting. Orange cinnamon cookies

One thing I love about baking at home is that my mom has lots of beautiful plates that I can use for my food photography. She has all sorts of different size plates and tea cups that she accumulated over the years from around that world that make the perfect prop for food styling. I’m still on a christmas baking quest and today’s menu is orange cinnamon cookies. I did not have any snowflake shaped cookie cutter so I used a star cookie cutter instead and decorated it using melted white chocolate. You can use icing gel if you prefer. One thing about making cookie dough – they are best made a day ahead and then stored in the refrigerator for the flavour to settle in. It can be quite tricky working with melted white chocolate because they tend to harden quickly which could clog up your pipping nozzle. Spiced pumpkin loaf

Pumpkins are in season and I’ve been playing around with different pumpkin recipes. The last time I made spiced pumpkin muffins and they were a hit amongst my friends. This time round, I’ve decided to make a spiced pumpkin loaf cake with loads of nuts. This cake is super easy to make as it does not require the use of a mixer. All you need to do is to mix the dry ingredients in together with the wet ingredients. The only troublesome part is the grating of the pumpkin. I’ve used buttermilk for this cake. U can either buy it from the shops or you can make your own buttermilk by adding one or two tablespoons of lemon juice into the milk. Alternatively, greek yoghurt can used too. I’m a huge fan of adding nuts into the cake, so feel free to add walnuts or almonds into the cake.
