Anzac biscuits

I love festive baking – it gives me a reason to bake even more and doesn’t make me feel bad for procrastibaking. Two more days to Anzac day and I’m keeping up with the tradition of making Anzac biscuits. The traditional Anzac biscuits are oats with desiccated coconuts. But I like my biscuits to be fancy so I’ve added cinnamon, dried cranberries and white chocolate. One good thing about Anzac biscuits is that it is super easy to make and you don’t need to rest the dough overnight. So all it takes is one big bowl to mix all the ingredients in and then rolling it out into little cookies. Chocolate banana muffins

I bought some bananas last weekend and was waiting for it to overripe to make some banana muffins. Now that Lent is over, I can finally stuff my face with chocolate. So I decided to make chocolate banana muffins today. As much as I love my Kitchen Aid, but I  find it really heavy and troublesome to use. Thank goodness, most banana muffin recipes uses the mixing method which makes my life so much easier. Baking has always been a therapy for me. I like how it is systematic and that I get to add my favourite ingredients into my own baking. Also, I enjoy watching television while baking. Classic hot cross buns

I’m on a roll with these hot cross buns! Having so much fun making them and adding my favourite ingredients into it. I adapted this recipe from Donna Hay but made a few adjustments to suit my liking. Traditionally hot cross buns included sultanas, dried fruits such as apricots but I am not a fan of any of those things so I added orange zest, walnuts, chia seeds and dried cranberries into my own rendition of hot cross buns. I had a few dramas this morning making the hot cross buns. I forgot that I left the dough in the oven to rise and I happily turned on the oven to preheat it for the cupcakes that I was making concurrently. After 20 minutes, I smelt this fragrance coming from the oven and then I remembered that my dough was sitting in there! Banana hot cross buns

Finally the long weekend has arrived! I’ve been so caught up with placements and uni work that I haven’t had the time to bake or post. I’ve never really enjoyed hot cross buns till I lived in Australia. It was definitely not a tradition to have it back in Singapore. But after living in Australia for four years, it is becoming one of my favourites. Initially, I wanted to make banana bread but then I thought, why not make a banana hot cross buns with all my favourite ingredients in it. So I added walnuts, chia seeds and chocolate chips into my banana hot cross buns. It was easy making these buns, the only thing you need is time for the dough to rise. The banana hot cross buns turned out to be delicious and now my easter is complete!
