Peanut butter swirl brownies

The peanut butter craze continues. This will be my last peanut butter recipe because I ran out of it and I’ve eaten enough peanut butter baked goods for the past few days that I’m getting tired of it. This brownie is made for peanut butter lovers. I’ve just swirled loads of peanut butter onto a rich dark chocolate brownie. One thing I dislike about baking is the washing up. I’m always a fan of recipes that does not require the use of a mixer. I mean the Kitchen Aid is an excellent machine to use, but it’s so heavy and I’m just lazy to carry it out of the cabinet, wash it, dry it and place it back. So I’m pro-mixing method. Hence, I am in love with this recipe. I used Lindt 90% dark chocolate for most of my brownie recipes. This is because brownies require quite a large amount of sugar to get a nice graze on the top. Coconut cream cake

My latest obsession is making layered cake – it just looks so fancy with the cream and frosting. Since tonight I’ll be having a thai dinner party at my place, I decided to make a coconut cream cake. This cake is simple to make, just that there are quite a number of steps involved and lots of washing. The cake tastes amazing which makes everything worthwhile! There are three major steps in making this cake. First, the cake of course. Second, the syrup that drizzles over the cake. Last of all, the cream that goes around the cake. I used two 7″ round cake tins for the cake because I’m bad at dividing the cake into two. Fudgy chocolate brownie

Brownies are one of my favourite desserts to make. Firstly, they are great for any occasions. Secondly, they make great tray bakes; cut them up into bite size pieces and they would be gone in no time. Lastly, they are easy to make – it’s almost foolproof and they taste delicious. I adapted this recipe from BBC good food and one thing I like about it is that it does not require the use of the standing mixer. All you need is an electric hand whisk. As much as I love my Kitchen Aid but it’s so heavy and I’m lazy to clean the equipment after use so this recipe works perfectly for me. This recipe is slightly different from the other brownie recipes that I’ve posted. It requires the separation of the egg whites from the yolks. Coconut crusted lime cake

Limes are in season! I love it when people hand me a bunch of limes from their gardens for my baking. So today I decided to bake a blueberry lime and coconut crusted cake for afternoon tea! Lime and coconut crusted cake Preparation time: 20 min Baking time: 50min or when skewer comes out clean Nutrition per slice (8 servings) Ingredients 190g self raising flour 120g unsalted butter 120g caster sugar 2 large eggs 1 tsp vanilla essence 120g plain yoghurt Zest 2 large limes 60ml freshly squeezed lime juice 110g frozen blueberries 2 tbs desiccated coconut Directions Preheat the oven to 170 degrees Grease an 8 inch cake tin Beat the butter and sugar until light and fluffy Add in the 2 eggs gradually, beating throughly after each addition Turn the mixer to low speed and add in the yoghurt and lime juice and zest and vanilla essence.
