Little key lime cheese tarts

Limes are in season now and one of my favourite desserts is key lime tarts. I saw this recipe on Sally’s baking addiction and decided to give it a go. I’ve made key lime tarts before (click here for the recipe) but this new recipe calls for cream cheese… yum! As usual, I tried to cut down the sugar and butter as much as possible and the result is a delicious, tangy and very sour tart – which I absolutely love! So if you are not a fan of sour stuff, reduce the amount of lime juice used. Other than that, this recipe is perfect for dinner parties and it’s really easy to make! Nutrition per tart (12 serves) Ingredients for the crust 15 pieces of digestive biscuits 50g melted unsalted butter Ingredients for the filling 140ml of freshly squeezed lime juice (about 5 limes) Zest 5 limes 250g condense milk (I used Nestle skimmed condense milk) 120g cream cheese 5 egg yolks Directions Preparation time: 20 min Baking time: 10 min for the crust, 15 …

Tassie Adventure

Have you ever thought of visiting Tasmania? This beautiful island situated off the south of Australia is a reminiscence of New Zealand. It’s harsh climate and landscape create one of the most beautiful scenery in the world. I visited Tasmania twice – Once in November 2014 and again in April 2016. There is just so much to see and do in Tasmania that I am thinking of going again. Depending on what you like to do, a good amount of time to spend in Tasmania will be at least 5 nights. I’ve complied my itineraries for both trips and hope that it will spur your interest to make it your next holiday destination. Day 1 Hobart – Wine Glass Bay (167km) We drove from Hobart airport to Wine Glass Bay. The drive took us about 2.5hours and we stayed a night at Swansea – Sheoaks Moana View. It cost us 160aud a night and we had the whole place to ourselves. The drive from Sheoaks to Wine Glass Bay was about 15min. You have to pay a …

Almond cookies

Coming back to Australia really makes me miss home. So lately, I’ve been on a quest to recreate the goodies that we have during Chinese New Year. My uncle passed me his homemade almond cookies recipe and it was absolutely delicious – All my Singaporean friends loved it. The thing about almond cookies is that it has to be crumbly in the inside. It’s not a soft cookie – in fact it is a hard crumbly cookie. The best part about this cookie is that it does not require any equipment. All you need is a sieve and mixing bowl so less washing to do. But it does require some strength in sieving the icing sugar. This cookie unlike other kinds of cookies does not require resting in the refrigerator. Once the dough is made, roll out the cookies straight away and pop it into the oven. Almond cookies Preparation time: 15 min Baking time: 10-15 min or when the cookies turn brown Nutrition per cookie (one batch makes 50)  Ingredients for the cookies 250g plain flour …
